Chicken Kassa In Odia Style

Ingredient :
·       Chicken (With Bone) – 500gm
·       Onion (Finely Chopped) – 2 Pcs (Large In Size)
·       Ginger-Garlic Paste – 2 Tbsp
·       Tomato (Grated)- 1 Pcs
·       Chopped Coriander Leaves – ¼ Cup
·       Bay Leaf – 1 Pc
·       Mustard Oil – 4 Tbsp
·       Turmeric Powder – 1 Tbsp
·       Red Chilli Powder – 1 Tbsp
·       Garam Masala Powder– 1 Tbsp
·       Cumin Powder – 1 Tbsp
·       Coriander Powder– 1 Tbsp
·       Green Chilli (Slit) – 2 Pcs
·       Lime Juice – ½ Tbsp
·       Water – 100ml
Method :
·      Take all chicken pieces in a bowl, add ½ tbsp lime juice, ½ tbsp turmeric powder, ½ tbsp chilli powder, 1 tbsp Oil, 1 tbsp Ginger-Garlic Paste, ½ tbsp garam masala powder, salt to taste and mix them well. Allow the chicken to marinate in the refrigerator for about 1 hour.

·       Heat a kadhai and add remaining mustard oil. Once the oil starts to smoke lightly, add bay leaf, wait for 15 seconds and then add the finely chopped onion. Fry them on medium flame about 10 minutes until they are light brown to your eyes. Then, add remaining ginger garlic paste and fry for another 5 minutes until the raw smell goes off. Next, add the dry spices (coriander, cumin, and red chilli) mixed with 100 ml of water. Add grated tomato and salt to taste. Continue frying till it releases oil.

·       Add the marinated chicken to the kadhai. Raise the heat and mix everything thoroughly. Fry the chicken, stirring frequently to check that it’s not sticking to the kadhai, for 15 minutes on high heat. Now it will start releasing water. Add green chilli , garam masala, mix it well and cover cook for 10 minutes on low flame.

·       Open the lid and continue frying on high heat until water in the kadhai gets dried out.

·       Add finely chopped coriander leaves, mix it well, cover the lid and rest it for 10 minutes before serving.

·       Now your delicious chicken kassa recipe is ready to be served. It surely goes well with chapati, roti or rice. Happy eating !!!
